Experts say breakfast is one of the most important meals of the day. I agree. That’s why I have it for lunch and sometimes dinner. Eggs just call to me. Experts are now saying that eggs are good for us again. First, they’re not, along with butter and low fat and now they are. Wow! Eggs have come a long way again, baby.
Speaking of eggs, I remember when I had a hysterectomy at the age of twenty-nine. That was yesterday, by the way. My ex asked my eight-year-old daughter what was happening to me and she explained sincerely that her mother was having her yolks taken out. That little phrase still haunts me today with laughter every time I think of eggs. Where she got it from, I don’t know, but you know how kids are.
For lunch today, I decided bacon with whole grain oat bran toast, eggs over medium and some grape jelly would hit the spot. It did and it brought back memories of when a little girl looked up at her father with all the sincerity she could muster and told him that her mother no longer had yolks. How profound!
